Wolfgangs Breakfast
This are breakfast prepared by our Austrian friend on the stay at his home. Thanks to Wolfgang and Monica for the warm hospitality.
I make my own organic bread with some sourdough which meant to discard for refreshing . If you don't have sourdough just add extra 1 to 2 gm of instant yeast.
Organic Bread
Ingredients
Organic bread flour 700gm
Instant yeast 4gm
Sourdough 30gm
Salt 7gm
Organic sugar 40gm
Water 440gm
Method
Sift bread flour into the mixing bowl, follow by the rest of ingredients. Use a K beater to knead the dough until stretchable and not breaking when stretch.
Remove dough from mixing bowl , then use your hand to shape into a smooth ball. Put back in the mixing bowl that is coated with some oil or flour. Cover and rest until the dough raised to 2 or 3 times in volume.
Scrap raised dough on to working table
Press down all the air bubble. Divide dough into 3 pieces or you may just use the whole dough to make a giant loaf of bread that's what I always do😆.
Flatten the dough with your hand the roll it up tight. Rest for another 45 min to 1 hours or commonly use your eyes and finger to touch.
It feel like airy light.
Preheat your oven to 220'C for at least 20 minutes. Bake shaped dough for 30 to 40 minutes . Normally I will choose the colour of the crust that I want.
Make sure to cool your bread before cutting.
BREAKFAST
Red Capsicum 1/2
Green Capsicum 1/2
Yellow Capsicum 1/2
Ham 2 slices or bacon 4 strips
Onion 1 small or 1/2 big
Diced all the above ingredients.
Eggs 4 nos
Bread 4 slices
Butter
Cooking oil.
Pepper and salt to taste.
1. Fried sunny side eggs leave aside
2. Spread some butter on both side of
the breads then toast it.
3. Heat 2 tablespoon of oil add ham to
fry till light brown (if using bacon
just use 1 tablespoon of oil).
4. Add onion fry until translucent,
add capsicum fried for further 2
minutes then season with black
pepper and salt.
5. Serve on toast and fried egg.
Notes: You may use button
mushroom, Celery, carrot
or meat that you like.
